I actually made macho nachos for lunch today.

Today is Nachos Day or some websites call it "I Love Nachos Day." Well it was just a couple of weeks ago that we celebrated International Day of Nacho but having a second Nacho day in our calendar sounds good to me anyway.

I actually made macho nachos for lunch today. You know that's nachos with everything you can think of smothered and baked on top. I had seasoned hamburger meat and sausage both pored on top with melted cheese, bell peppers, hot peppers, diced tomatoes, onions, corn and black beans. Baked off in the over until the edges of the chips tipped in brown. Then I topped it with sour cream.
Sadly I made it to hot for Stephen. Oops! But football and nachos was a thumbs up!

The International Day of the Nacho takes place every October 21. It was initiated in the 1990s in the United States and Mexico to commemorate the invention of nachos by Ignacio "Nacho" Anaya in 1943 at El Moderno restaurant in the border town of Piedras Negras, Coahuila.
